Brazilian Inspired Shrimp Soup


1-2 tablespoons bacon grease
1 onion, chopped
6 cloves garlic, minced
1/4-1/2 tsp. red pepper flakes
6 cups homemade chicken stock
2 zucchini, quartered and chunked
1-2 lbs. shrimp, peeled and cut into bite size pieces
1 can coconut milk
1 tablespoon lemon juice
1/2 cup chopped fresh cilantro or 1 tablespoon dried cilantro
salt & pepper to taste

Melt bacon grease in a large pot. Add onion and garlic, cook until soft. Add red pepper flakes and chicken stock. Bring to a boil. Lower heat, add zucchini and shrimp. Cook until shrimp are done (opaque). Add coconut milk, lemon juice, cilantro, salt and pepper.

  1. Mmmmm, I'm not a big seafood fan but I can easily see substituting some chicken for the shrimp. Sounds delicious.
